Does Fresh & Frozen Meat weigh the same?

I think about this often, well most times I am defrosting meat and my husband the farmer tell me that frozen and fresh meat weigh the same. I have always thought that they don’t, to me frozen meat feels heavier even after taking the packaging away. If you buy meat fresh one normally buys freezer bags and puts it away or if you buy meat in thermoform (supermarket packaging) you can normally find a pad at the bottom to soak up any moisture.

I have weighed meat fresh and frozen to discover there is a difference even a minimal one, so if you are buying frozen meat and they weigh it and price it on the frozen product you may find you are paying for the water in the meat. Thus up to 1/3 more can be frozen water and myoglobin, which is the by product of fresh meat that many people mistake for ‘blood’.

There is nothing wrong with purchasing fresh or frozen as most people tend to buy extra to freeze later anyway. There is many different types of packaging and I’ll go into those next blog. If the meat looks green, smells like sulphur then take it back, washing and drying will not rid of this smell, lamb has a stronger smell but should not smell like sulphur.

Remember when taking meat out of any packaging give it a quick rinse under water, or rain water to wash off any plastic products from the wrap when in thermoform. Rub and rinse when taking meat out of cryovac package as meat can absorb the smell and can taste like the packaging leaving the meat not pleasant to eat. Remember to pat dry and do not use if the meat smells off. It does not need you to soak it, do not mix meats and or put it with poultry, this will spread bacteria and can make you sick.

If you can buy meat from your butcher or local farm paddock to plate outlets, they will not only give you the best quality (even if a little more pricey) they can give you good tips on ways to cook and how to freeze and thaw meat. If you buy grass-fed over grain-fed, they will not only smell different they will taste different.

T-Bone my favourite cut

T-bone

Doesn’t this look ready to eat and yummy. The white specks through it are just enough fat to make it moist and tender.

What is the T-Bone: it combines two lean, tender steaks. Consists of both top loin (strip) and tenderloin steaks, connected by the t-shaped bone. At-shaped bone separates what is a “New York Strip”and a “Tenderloin Fillet”.

The Tenderloin Filet extends into the short loin section. A tenderloin filet is a long tubular shape that is thicker at one end and thinner on the opposite end. The Porterhouse is cut from the rear-end of the short loin which contains a larger portion of filet. The T-bone is cut from the front end of the short sirloin which has a smaller filet portion.

I love to grill ours, add lots of fresh seasonal vegetables steamed and some mushroom gravy, which is the farmers favourite. Me I love pepper sauce but have never made a good one.

3 Quick tips to know you are buying fresh meat

When your in the supermarket and looking at the meat counter, you know your families health and food choices come from your decision making . Most people with families look for value for money and quantity, making the most of what’s on offer, what’s in the family purse, how far can the purchases go.

  1. Smell, never never eat anything you think is ‘turning’. Meat should have hint of a smell a little like blood or stronger if it’s game. It should smell pleasant and nothing much more.
  2. Red Meat should look red, pink if pork and white if chicken. It may sound simple but some meats can have a slight tinge of purple in them this is ok, but it means the meat is begining to have sat for a long period of time and needs to be used immediately or frozen.
  3. Check the hydration of the meat, gently push your finger into the meat and once you have taken it away it should spring back and the only evidence is a slight indentation on the packet, if it stays deflated then I wouldn’t buy it.

In Australia we are lucky to have such good quality meat and I can not remember a time when there has been a meat recall. Most supermarkets have in house butchers and also a range of selection of good quality meat.

I often get asked if there is blood should I avoid it, I say no, this means it is fresh, the pad at the bottom of the packet is such that it soaks it up as meat should not sit in blood as it will start to set up bacteria. Buy it, open it and freeze it fresh.

If none of these steps are good don’t buy it or eat it.

Where are your food sources?

If you are anything like me, I find shopping a nuisance and a necessity. We have to eat and in order to do that we have to shop. Whether you chose a large supermarket, small local store, bulk store or a farmers market, says something about the time you have and the place in which you live.

Most people who go to farmers markets, are fully versed with seasonal fruit and vegetables and most times are prepared to meet their grower and talk with the families who produce their food. Farmers markets are for strolling, smelling, eating and purchasing food direct from growers. They bring a little bit of country into cities or regional areas so others can appreciate how much time and effort it takes to bring fresh produce and organic food to consumers plates.

Local stores are where one goes if they don’t want to travel far, in Australia many now work in hours that suit busy working people who need to call in after work or are restricted by location to do their shopping. Many local stores in South Australia carry many loca products and are great places to do shopping.

Large Supermarkets have almost become family outings, they have produce market stalls in the fresh food sections, they have meat on display and some even have barista’s where you can have a coffee whilst you shop. Some big supermarkets also have free tastings and free fruit for you to eat whilst you are shopping. Competition has made them look to pleasing the consumer as well as shareholders.

Bulk Stores are just that, places where you can buy in bulk. They are great for things such as more than 30 rolls of toilet paper. I find bulk stores interesting and they also have good bargains and the quality of food and produce is also fantastic.

So what kind of shopper are you, it doesn’t matter where I frequent I always look to buy local then National. There is nothing like our kangaroo Symbol, stating it is Australian Made that makes me pick it up and place it in my trolley.

Being produces of Certified grass-fed meat, I am lucky that I don’t have to purchase meat and now that we are working with Little Greenbush Poultry  we are lucky to get paddock fed Chicken as well as our own grass-fed beef and lamb. There is nothing like the taste anywhere infact if you have grown up with shop bought meat (which is also good quality in Australia) you may take a while to get use to the taste.

Retiring Old Dogs

I come back to my blog after a long absence, I did not stop writing because I didn’t have anything to say, I left because I didn’t know how to express the last couple of months in writing. The last of the summer months were hard on the farm and upon me, losing my beautiful old Pete has been upsetting, his presence has provided 16 yrs + of comfort and assurance without him it was difficult. My mother in law did a painting of him and laminated an old shot which is now on the fridge and every time I open it I give it a pat.

Moving into the drought and into winter certainly has us all feeling a little bit of relief and I openly (much to the farmers dislike) declare I won’t go through another drought. In fact I told a couple of friends in the supermarket on Saturday, I will move back to my house in the city. He didn’t comment till over 4 hours later and stated I shouldn’t be telling people as they will think I’m going to leave him … news is I will be for the summer. It’s a tough battle mentally watching the farmer and the farm going through drought, nothing looks fresh or green, we are lucky we have had more rain than some people we know.

With Pete gone, it has allowed us to take a breather from things, re-evaluate business and draw up another plan moving forward. I have always talked about moving to retire off the farm. It is something that we both need to agree on, I can see country communities are not great places for the elderly, especially if their families have moved away, the time to stop traveling or driving leaves many isolated and that is not how I want to be nor is here the place I wish to retire in.

I find it amazing when we talk about a plan with others, I get this comment “what will the farmer do if you retire or sell?” it offends me, when I gave up a career I loved, moved away from my daughter, friends etc  these same people never said to me “what will you do living on a farm, 50+kms away from anything, not knowing anybody” not one so as we come to moving our plan forward  I understand how difficult it may be for him, but he too can adjust like I had too.

With Pete gone we have also had time to re-evaluate our working dogs and have noticed Mandy our eldest one needs to retire, she limps on her front foot and looks sore in her back legs, many years ago she jumped in the sheep yards and dislocated her hips – we nursed her back to health and now that she is moving into being 14 or 15 it is time for her to become a house dog. I am sure it’s arthritis setting in and when she looks pained we give her medication to assist. She is transitioning to be an inside dog quite well, she comes in at night jumps on the couch and slept there quite happily for a while till she found her way into our bedroom and on the floor at night scratching for a blanket. This noise woke me up as I was worried she would be too cold and uncomfortable on the carpet, then in Bordertown I found this dog bed and purchased it. As of today Mandy is now the retired dog and today the farmer said she would have to stop traveling with him, it’s stressful  to have her sliding around the front of the Ute if he has to chase cattle, so she is now the inside dog.

Do we identify ourselves when it is time to retire, will we be able to look and see that retirement needs to be an option whilst we are fit, well and young enough to enjoy it? or will we be like Mandy – have that moment where you jump out of the Ute, get put inside and told that’s it, she doesn’t know she’s retired as she still wants to be with him, travel in the Ute and play the vital roll of a working dog.
