Special Fried Rice

Are you like me and find you have many left overs in the fridge and fell terrible about throwing them out? I do, but was given a great fried rice recipe that I use and it covers many small dishes let over.

The only think about fried rice is that the rice is best 1 or 2 days after you have cooked it and refrigerated it. Today I used

left over roast chicken and chopped up the chicken into small bits

left over slice of bacon – chopped into small bits

1/2 onion chopped and I also had 3 slices of salami that I also chopped up.

I used table-spoon olive oil heated the non stick fry pan and put them all in together to cook.

I whisked 1 egg and after the mixture was ready poured it into the other half of the fry pan and once cooked turned it over and chopped t up.

I placed all of the mixture into a bowl and set it aside, I put half cup of peas on in the microwave for two minutes to cook.

Poured 1/2 cup of soy sauce and 2 tablespoons of Worcestershire sauce and put the rice into the pan. I use the edge of a fork and break up the rice and mix it with the sauces. I do this until all of the rice is coated brown (I use basmati rice) then I add the contents of the bowl together, tip in the peas and there you have home-made special fried rice.

It will now keep for another couple of days. Use any of the meats you have left over.
